This recipe is perfect for a quick, light, and healthy afterwork meal in the sun which doesn’t break the bank. Make it your own and substitute for any white fish – whatever takes your fancy, maybe not mackerel!

Me:Mo Cooks: Cod and Salmon Fish Tacos Recipe 

Ingredients (Serves 2): 

  • Tacos: 
  • 2 salmon fillets 
  • 2 cod fillets 
  • 1/4 tsp each: Cajun seasoning, ground coriander, garlic powder, paprika 
  • Olive oil 
  • 6 mini tortillas 
  • Garnish: 
  • 1/4 head lettuce, sliced 
  • 1/2 red cabbage, pickled (see instructions) – 120ml Red wine vinegar, 120ml water, 1tsp salt, 1 tsp black peppercorns  
  • 5 spring onions, chopped 
  • Fresh coriander, to taste 
  • 1 squeeze of lime  
  • Guacamole: 
  • 1 avocado, smashed 
  • 1/2 tsp peri peri salt 
  • 1 clove garlic, crushed 
  • 1 squeeze of lime  
  • Salsa: 
  • 2 tomatoes, finely chopped 
  • 1/2 tsp Cajun seasoning 
  • 1/4 tsp each: cumin, cayenne pepper 
  • Fresh coriander, salt, and pepper to taste   

Method

  1. First, on a chopping board, slice the red cabbage, lettuce and spring onions and dice the tomatoes. 
  2. Next, pickle the cabbage, add red wine vinegar, sugar and black peppercorns and leave for an hour minimum – longer if you want it completely pickled!  
  3. Slice the fish into chunks and marinade with the olive oil, Cajun, garlic powder, ground coriander and paprika about an hour before. 
  4. Once you’re happy with the pickle, make the salsa by combining all the salsa ingredients and set aside. 
  5. Fry the fish in a pan with olive oil, for about 7 minutes, until golden brown and cooked through. 
  6. Whilst the fish is cooking, make the guacamole by smashing the avocado with the other ingredients. 
  7. Once the fish is done, assemble the tacos by adding the chopped lettuce first, then the fish, then the rest of the garnish ingredients, salsa, and guacamole.
