It’s that time of the month when we give you the low down on what we’ve been whipping up in the kitchen (or BBQ because we’ve all been enjoying the heatwave, right?) Summer is not quite over yet, and we’ve got one of the best summer recipes right here. Today we’re not grilling, charring or smoking anything on the barbie – we’re talking super simple, fresh, and damn right delicious salads!  

 

Whether you’re looking for the perfect side to your late night date, speedy lunchtime pick me up or (you guessed it) ultimate BBQ side dish, this is the salad that is dressed to impress. Providing some of the best foodie content on Instagram lately, we’re bringing you the aesthetically pleasing, delicious and holy peach and burrata combo, from one of our favourites, Mob Kitchen 

 

Ingredients – Serves 4 

Handful of Pistachios 

25g Basil 

2 Tbsp Honey 

8 Peaches 

Handful of Rocket 

2 Burrata Balls 

Salt 

Pepper 

Olive Oil 

 

Recipe 

Step 1. Toast the pistachios in a pan with no oil until nice and golden, set to the side to cool. 

Step 2. Lightly oil a griddle pan. While you are waiting for the pan to get hot, halve your peaches, deseed and cut into slices. 

Step 3. Griddle the peach slices until nice marks appear, turn halfway. You can use a heavy pan or baking tray as a weight on top of the peaches to encourage the marks. When all the peach slices are griddled, put to the side on a plate. 

Step 4. For the sweet herb drizzle, whizz up the basil with the honey, a generous pinch of salt, 2 tbsp oil and 1 tbsp water. 

Step 5. Roughly chop the pistachios and drain the burrata balls from the juice. 

Step 6. Plate up, starting with a handful of rocket, then place the slices of peaches, tear the burrata, drizzle on that herb dressing, sprinkle the toasted pistachios and season with salt and pepper. Enjoy! 

 

Notes 

Be patient with griddling the peaches, they will cook, but because of the sugar in the fruit, they can burn quite easily.
