Now the hotter evenings are here, we’d love to give you some dinner inspiration for the best Summer recipe, full of nourishing produce to try at home and enjoy in the garden. This roasted one dish wonder is so simple and delicious, only 10 minutes prep and an hour in the oven! It is the best Summer recipe as an alternative to a hearty sausage and mash, it’s easy, light and healthy. Great for enjoying at a dinner party with family and friends, or just on your own! 

 

This recipe is adapted from a Mary Berry recipe and can easily be changed by adding any veggies you have in the fridge ready to be roasted! Please see the original recipe here. 

 (Serves 4-6) 

 Ingredients: 

2 tbsp any vegetable oil 

2 large onions, cut into large chunks or wedges 

2 red peppers sliced or cut into chunks 

2 garlic cloves, chopped 

225g cherry tomatoes 

 200g leeks sliced into chunks 

2 tbsp chopped thyme leaves or mixed herbs 

500g new potatoes, unpeeled and chopped into small pieces 

12 sausages of your choice, pricked with a fork 

200ml white wine or stock 

Salt and pepper to taste 

 

 Method: 

Preheat the oven to 220°C/ 200°C fan/ Gas 7 Place all the ingredients except the wine into a large, resealable freezer bag. Seal the bag shut and shake well to coat everything in the oil. Alternatively, put everything in a large bowl and turn the ingredients until they are fully covered in the oil. Tip into a large roasting tin, spreading the ingredients out into one even layer and ensuring that the sausages aren’t covered by any of the vegetables. Season well with salt and pepper 

Roast for about 30-35 minutes until golden, then remove from the oven, turn the sausages over, prick them with a fork again and toss the vegetables in the cooking juices. Pour in the wine and return to the oven for a further 20 minutes or until browned and the sausages are cooked, and the potatoes are tender. Serve hot.  

 

 Note: to be sure the potatoes are properly cooked at the end of the baking time, either cut into small bite sized pieces or par boil them for 5 minutes.
